El Monterey New Meal Ideas For The Entire Family!

When I grow up I want to be a chef. Yes, I actually wanted to do that too when I was a kid and a young adult. I loved cooking. I even entered one of my buns in a contest and won second place! I was so excited! 

However now I'm a mother and cooking is no longer fun all the time for me. It's more like a chore. All the time I'm worrying about what to make and how much and etc. 
If I could get a month off cooking, it would be well appreciated. 

And it would really help if my husband did some of the cooking, but alas my hubs is only microwave friendly :) 

There are many times when a quick microwaved dinner has saved the evening though and sometimes it makes me think of  having a burrito night! I use the El Monterey brands and I love them.

I've just been introduced to some new meal ideas from El Monterey which definitely cuts down on prep time and time spent in the kitchen! 

I had the chance to try these entrees:
1. Chicken Enchiladas with Spanish Rice and Suiza Sauce

2. Cheese Enchiladas with Spanish Rice and Red Enchilada Sauce

3. Chicken Mexicana with Pasta in a White Cream Poblano Pepper Sauce

4. Spicy Beef Enchiladas with Spanish Rice and Spicy Red Enchilada Sauce

These can be done in the microwave or conventional oven. I prefer the oven.  In 60 minutes you'll have dinner ready. You can make a salad or soup or order a side of bread sticks to go along with it if you want, but for a busy night or just one where you don't want to go through the various dinner prep stages, these are perfect for the family. 

The taste is great, but for the spicy ones, my kids weren't fond of them at all. I also love that it's just enough meal in one package for four people and I don't have to deal with leftovers. 

My favorite of the four is the Chicken Mexicana with Pasta in a White Cream Poblano Pepper Sauce.
