Summer Indoors Or Out?

It's almost Summer! Kids are out of school already. I'm not too freaked out about this.  Both my kids have joined the library reading program and will also begin VBS in June. I'm sure we'll find other fun things to do in between too. 

1. What's one thing you plan to do this summer? 
2. Will you be mostly indoors or outdoors during the summer?



I want to make these muffins soon. I found them in the Kiwi magazine.

Vegan Raspberry Nut Muffins
Make the most of late spring and summer fruit with these versatile, whole grain muffins from vegan chef Ann Gentry's upcoming cookbook, Vegan Family Meals (June 2011, Andrews McMeel). Gentry loves the combination of fresh raspberries and chopped pecans, but is also a fan of bananas and walnuts. Make the recipe again in the fall and swap the berries for apples or pears!
Active time: 10 minutes
Total time: 50 minutes

  • 2 cups spelt flour or whole-wheat pastry flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon fine sea salt
  • 1 cup pecans, coarsely chopped, divided
  • 8 ounces vacuum-packed soft silken tofu (such as Mori-Nu)
  • 2/3 cup plain unsweetened soymilk
  • 2/3 cup pure maple syrup
  • 1/3 cup neutral cooking oil
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons vanilla extract
  • 6 ounces fresh raspberries
  1. Preheat the oven to 350°. Line 12 standard muffin cups with paper liners.
  2. Whisk the flour, baking powder, baking soda, cinnamon, salt, and 3/4 cup of the pecans in a large bowl to blend.
  3. Blend the tofu, soy milk, maple syrup, oil, vinegar, and vanilla in a food processor until completely smooth and creamy.
  4. Stir the tofu mixture into the flour mixture just until blended. Fold the raspberries into the batter, but do not over mix the batter. Divide the batter equally among the prepared muffin cups.
  5. Sprinkle the remaining 1/4 cup pecans over the muffins and bake for 25 to 30 minutes, until a toothpick inserted into the center of a muffin comes out clean.
  6. Transfer the muffin pan to a cooling rack and let the muffins cool for 10 minutes. Invert the pan to remove the muffins. Turn the muffins upright and serve them warm or let them cool completely on the cooling rack.

Per muffin: calories 275, fat 14 g, protein 5 g, carbohydrates 32 g, dietary fiber 5 g

  2. My husband got a really good deal on season passes to a water park, so I think we'll be spending more time outside than we usually do (in Texas outside becomes un-bearable unless there's water). Usually we take a lot of visits to the Children's Museum, Chick File (and their indoors playground), and some time in our backyard kiddie pool. And of course VBS! :-)

    2) I think we will be spending lots of time outdoor until we're baked!

  7. These muffins look wonderful! I work full time and then I've got family to see and writing to do so most of my time will be inside. I have to grab moments with nature though. It is necessary to my sanity. lol

  8. This summer I plan to clean out my house. I have a tendency to save stuff, and I need to clean out! Also, we plan on going to vacation. Road trip to Cedar Point I believe, but not sure when. Love road trips with the hubby. He's fun!

  9. I didn't realize it was that time already! Just goes to show you how my sense of time is warped >.<

    I don't really have Summer plans. I WISH I did, but I can't plan in advanced because of being sick. I really hope I do get to spend time outside, though.

  10. Both. Our summer plans always includes road trips, amusement parks, water parks, trips to the beach, museums, library and lots of grilling.

  11. We plan to spend the last week in June in Maui. However, I plan to stay indoors as much as possible. I'm more of an A/C kind of gal. :-)

  14. This is my second try-didn't post the first time?
    Well, we intend to get out more:
    1. Both, my husband and I, love to garden. I have two huge flower gardens and he has a few spots I've allowed him to harvest;-)
    2. Maybe sit by the neighborhood pool and read-don't swim.
    3. Visit Denver Botanical Gardens
    4. Create summery and light bookmarks, cards and coasters for my ebay and etsy shops.
    5. Cook more light dishes and clean up our eating habits-I'm seriously going to get flack about this!

    1. I had a little pre-summer break at the end of May where I caught up with friends and got out to take some photographs. It was really lovely. At the end of June, I'm spending a week in Wales with my husband and father and step-mum. It will be a lovely week spent surrounded by nature.

    2. I am notorious for spending too much time inside but I have made a promise to do one London-based activity each month and that normally gets me outside. It has just occurred to me that I will be out of London at the end of this month so I need to make a plan!
